AdS/CFT, which posits a map between a strongly interacting quantum field theory and a classical theory of gravity, has proven to be a valuable tool in investigating the physics of strongly interacting quantum systems. In the large dimension limit, the gravitational equations often simplify, yielding yet greater insight into the quantum side of the map. I will investigate the particular example of Bjorken flow, which is relevant for the analysis of heavy ion collisions
