First order thermal phase transitions at infinite volume are characterized by the existence of phase separated states with energies between those at which the phase transition takes place. With the help of a simple holographic model we will study how working at finite volume affects this picture, both using static and dynamic methods. In particular, we will find a rich set of inhomogeneous equilibrium states whose thermodynamic properties and their dominance, both in the micro-canonical and canonical ensembles, will be determined. Finally, we will discuss their local (in)stability properties and simulate real time evolution from the unstable states to the stable ones.
